#37 Make Healthy Meals Week 2

Monday - leftovers for dinner. But I did have that spinach salad later. I won't count today as a healthy meal day though, since no one else really ate healthy.

Tuesday - cheese ravioli with mixed veggies added, and tomato sauce with spinach added in. It was really healthy and I enjoyed it. Gwendolyn actually chewed on some of the veggies, but I don't think she actually ingested any. 1 down!

Thursday - marinated salmon and garlic potatoes - yum!

Saturday lunch - Pumpkin Penne Wise pasta (Rachael Ray recipe)

#7 - failure

I had put "no eating after 8pm" on my list because it is a good way to stop from mindless snacking and is an easy step in maintaining weight. But last night after Gwendolyn finally went to sleep I was starving. I really debated about eating because it was 8:15, clearly past my time limit. I eventually decided to have a spinach salad with Gorgonzola cheese, pecans and a vinaigrette dressing. Pretty healthy right? Well the 1/4 piece of chocolate mouse cake leftover from my birthday dinner was NOT healthy. But I only ate a little. My first failure and it may be one of many, but I will persevere!

#13 Things to be Thankful for v 2

1. my friends - thanks for helping me celebrate my birthday girls!
2. Gwendolyn- right now she is literally running around in her bed giggling and laughing. Its dark in there, nothing exciting, but she is having the best time.
3. My husband - he takes such good care of me and is my all time best friend. I love him. Edit: after posting this, he did something special to make my toes curl!!!

#98 Update my resume

Done for now. I updated my resume to include my current role. It is not clean enough to be used for job hunting, but I got all the key points on paper that I would want to include. I had to remove several older items, since it was well over the one page limit. Check check ya'll.

#32, 33, 34

I'm doing very well in my flossing, electric tooth brushing and night cream usage. I even bought SPF lotion for my neck and chest to wear during the day (as Oprah told me to do).

#29 Call Extended Family

I know, I know you have to call family on Thanksgiving - but I still did it. I talked to my aunt Pat, aunt Susie, Jason & Kristen. AND talked to my college roommates Sandy and Kelly. Sandy just had a baby! and Kelly is due in July! Baby city, baby baby city.

#20 Date Night!

Check! John took me (and Gwendolyn) out for an awesome meal at Eddie V's. I had steak and scallops, they were perfection. Gwendolyn was really good for the meal, but decided she was done when the plates were taken away (fair enough, right). They even gave us a free birthday dessert to take home, chocolate mousse - it was rich chocolaty goodness.

Even though Gwendolyn was there, I am still counting this as date night. The price of the meal certainly qualifies as a date.

#13 Things to be Thankful for

My intention at some point is to have a gratitude journal where I also keep track of #19. But until that time, there are a couple things I am especially grateful for today.

Gwendolyn - even though she pooped in the tub, and freaked when I tried to put her on the potty, she is all around delightful. I just love when she streaks to the bedroom after her bath, grabs her blankie, throws it on the floor and then gets down to cuddle with it. The pure joy is priceless.

Oprah - John assumed that the idea for this list came from Oprah, but it was all Monica! I admit its a very Oprah thing to do and she inspires me to do and think differently about many things. She is a role model for women as someone who lives "their best life". But I don't know that I would take any weight loss tips from her (she's on an up swing again).

Physical fitness - I haven't been able to run for the past couple weeks due to a minor injury. I really, really miss it and it is starting to effect my mood (read: bitchy). I ran for 14 minutes today and it... was... awesome. That stationary bike hurts my butt.

#37 Make Healthy Meals

Tonight (Monday) I made marinated salmon, mashed potatoes with mixed veggies, and buttered wheat bread for dinner. And I drank vanilla soy milk. Gwendolyn actually ate the fish and wheat bread and asked for more of both. The one thing I thought she would eat (potatoes) she didn't even sniff. But I was happy she at the fish anyway. John even ate some of the mixed veggies (mostly because they were blended into the potatoes). All around, a successful meal, one of the happiest we have had in weeks!

Wednesday I made chicken veggie soup and we had tamales (technically homemade but not by me). Gwendolyn loved the tamales and ate 3 of them herself. The soup wasn't so great, but it was healthy at least.

Thursday totally counts, because I cooked A LOT! Apple Pie, Pumpkin Pie, Stuffing and Sweet Potatoes. All delicious! Thanksgiving dinner was all homemade (not necessarily "healthy"). That was really all I cooked this week, only 3 days. The rest of the week was leftovers because there is no more room in the fridge.

Next week: use up as much as possible from the freezer so I have room for the "homemade" frozen meals!

Technically, I have 101 things. But as I reread the list, I feel old. I may have to make some edits.

Bring it on - 101 in 1001

This kicks off 101 in 1001 days - starting today 11/17/07. That gives me until 8/14/2010 to finish. By then I will be 30, nearing 31. Other than that, who knows where I'll be and what I"ll be doing. I certainly hope I get most of the list accomplished and come up with more to add to it.
